PERDUE Turkey Italian Lettuce Wraps

ounces
11/4 cups shredded carrots
11/4 cups red bell pepper, diced
1 cup water chestnuts
1/3 cup water
1/3 cup stir-fry sauce
1 cup scallions, sliced, optional
1 cup fresh cilantro, minced, optional
12 Romaine lettuce leaves



  1. In a large non-stick skillet, mix together ground turkey, carrots, peppers, water chestnuts, water and stir-fry sauce. Bring to a simmer and heat through, approximately 2 minutes. Remove from heat and mix in scallions and/or cilantro and keep warm.
  2. Lay lettuce leaves on clean, flat surface and spoon 1/3 cup turkey mixture into center of each leaf. Wrap up in a packet to contain mixture and serve immediately.

Note

Variations:
  1. Serve over udon or soba noodles.
  2. Serve as a topping for pasta, rice or salad.
  3. Use filling inside of bell pepper halves.
  4. Use as a warm sandwich or omelet filling.

  4. I've never tried making my own lettuce wraps! Those look really good! I also like the addition of the water chestnuts! It's like an Asian-Mexican fusion taco! Thanks for sharing! I'll have to try making something like this!
