11/4 | cups shredded carrots |
11/4 | cups red bell pepper, diced |
1 | cup water chestnuts |
1/3 | cup water |
1/3 | cup stir-fry sauce |
1 | cup scallions, sliced, optional |
1 | cup fresh cilantro, minced, optional |
12 | Romaine lettuce leaves |
- In a large non-stick skillet, mix together ground turkey, carrots, peppers, water chestnuts, water and stir-fry sauce. Bring to a simmer and heat through, approximately 2 minutes. Remove from heat and mix in scallions and/or cilantro and keep warm.
- Lay lettuce leaves on clean, flat surface and spoon 1/3 cup turkey mixture into center of each leaf. Wrap up in a packet to contain mixture and serve immediately.

ReplyDeleteI've never tried making my own lettuce wraps! Those look really good! I also like the addition of the water chestnuts! It's like an Asian-Mexican fusion taco! Thanks for sharing! I'll have to try making something like this!
